Here is my recipe for a grain, sugar and dairy free cake infused with lemon essential oil.


Lemon oil is one of the best essential oils to use in the kitchen because it smells amazing, tastes amazing, and has many benefits to your health, such as aiding digestion and supporting your immune system response.

Paleo and Gluten Free

For the cake
5 Eggs
1/3 Cup of melted coconut oil
1/4 cup maple syrup or raw honey
Zest and juice of 1 lemon
1 large passionfruit
5 drops Therapeutic Grade Lemon Essential Oil
1/2 cup plus 1 tablespoon coconut flour
1/4 cup tapioca flour/starch
1/2 tsp baking soda
Pinch salt
For a Drizzle Topping:
2 Tbsp Raw Honey
5 drops Therapeutic Grade Lemon Essential Oil
* Preheat the oven to 180c and grease or line a 24cm by 12cm loaf pan. 
* In a mixing bowl, whisk the eggs with the coconut oil, maple syrup/raw honey, lemon juice and zest, passionfruit and Therapeutic Grade Lemon Essential Oil.
* Add the coconut flour, tapioca starch, baking soda, and salt. Mix well for 3-4 minutes.
* Transfer to prepared loaf pan. Bake for 40 minutes, or until a toothpick inserted in centre of the cake comes out clean.
* About 5 minutes before the cake is done mix together the honey and Therapeutic Grade Lemon Essential Oil in a small dish. Set aside.
* Take the cake from oven, allow to cool for 10 minutes and remove from pan
* While still warm, Drizzle honey mixture over the top of the cake
* Slice and enjoy warm or at room temperature. 
I love mine served with some natural coconut milk yoghurt.
